Like most folks, we have traditionally purchased our beef from supermarket and restaurants, but too many times we are not happy with the product. The quality, texture and taste of supermarket beef are inconsistent - often just plain bad, and the source and method of production are unknown. So, in 2007 we decided to raise our own beef and to start a new line of business -- PrimeLine Beef, LLC -- to offer our own beef products to individuals and retailers. Because we want to produce the very best beef, we sought out the best quality beef-producing breed in the world – Wagyu. By combining our generations of experience in raising cattle together with cutting edge technologies, such as carcass ultrasound and DNA analysis, we are producing beef of the most exquisite quality and consistency.

Studies at Texas A&M University, Penn State University and Washington State University have shown that Wagyu beef contains a higher concentration of “good” fats, such as omega-3, than any other beef. Steve Smith, PhD from Texas A&M says, “Everything we’ve done so far tells us that Wagyu beef is better for you than the typical beef you can buy in the supermarket. We have not yet had any negative effects of Wagyu beef on plasma cholesterol, LDL particle diameters, blood glucose, triglycerides, or body weight.” (Taken from Beef Plus by Wes Ishmael; Smith et al, JAS, 207, Vol. 87). Wagyu beef has both a higher ratio of monounsaturated fats to saturated fats and a higher concentration of conjugated linoleic acids (omega-3 and omega-6). These characteristics have been shown to have positive effects on cholesterol and triglyceride levels, and to protect against heart disease.
